3 cutlets of 160 g each

350 g Ajvar spicy
80 g créme fraiche
3 cloves of garlic
1 small onion
80 g parmesan cheese

The preparations
This simple schnitzel recipe is very easy to prepare. But before you can enjoy it, you have to prepare a few ingredients. In the first preparation step, grab the garlic cloves and the onion. These ingredients are peeled and cut into small cubes. Once this is done, mix the following ingredients for the Ajvar Parmesan Sauce in a bowl.

Once you have mixed the sauce ingredients well, next you take the cutlets to hand. Flatten the cutlets with a meat mallet*. Once this is done, season the meat with a pinch of salt and pepper.
If you like, you can additionally bread the cutlets. Then you need additionally, flour, 1 beaten egg and enough breadcrumbs. With this you build up a breading station. Once this is done, the seasoned schnitzel is first dipped in flour, then pulled through the beaten egg and finally coated with breadcrumbs.
Those who prefer to prepare the escalopes without breading can skip this step. Once you have prepared everything, you can continue with the simple preparation.
Preparation of Ajvar Parmesan Schnitzel
The first step is to heat some butter in a saucepan. When the butter is hot enough, the onion and garlic cubes are briefly sautéed. Deglaze with the previously prepared sauce. Once all the ingredients are combined in the saucepan, the Ajvar Parmesan Sauce must be cooked over medium heat for about 12 minutes, stirring occasionally. Once the cooking time is over, the last step is to add only the parsley to the sauce.
While the sauce is boiling, you have enough time to fry the schnitzels. If you prepare the escalopes without breading, you need to heat about 2 – 3 tablespoons of oil in a frying pan. When the oil is hot enough, fry the escalopes for about 2 – 3 minutes on each side. Once the cutlets are done, place them on a piece of kitchen paper so that the oil can drip off.
If you have chosen to prepare the breaded cutlets, heat enough oil in a pan so that the cutlets float in the hot oil. When the oil is hot enough, fry the breaded cutlets on both sides for about 3 – 4 minutes until golden brown. Once the cutlets are golden brown, they are placed on a piece of paper towel so that the excess oil can drip off.
Then you have done it and the delicious cutlets can be served together with the Ajvar Parmesan sauce.
