The preparations

It doesn’t always have to be complicated to get something delicious on your plate. I’ll show you that today with this simple Sunday dinner. But before you can enjoy it, this simple meat dish needs to be prepared first.

The first thing you take care of is the preparations. You start with the garlic cloves and the onion. These ingredients are peeled and cut into small pieces. Once this is done, the next step is to grab the Gorgonzola cheese. The cheese just needs to be cut into small pieces. Once this is also done, you move on to the pork tenderloin. The pork tenderloin is briefly washed and dabbed with a paper towel. After dabbing, cut the meat into medallions about 2 – 3 cm thick. Once you have cut the meat, put it aside until further processing. Finally, you just need to put all the other ingredients at hand and you can continue with the simple preparation.

Preparation of pork medallions with gorgonzola sauce

In the first preparation step you take care of the preparation of the Gorgonzola sauce. For this you heat some butter in a saucepan. When the butter is hot enough, add the chopped garlic and onion. The garlic and onion cubes must be sautéed until translucent. Once the ingredients are browned, the next step is to add the flour. Then all the ingredients must be mixed well together until no more flour lumps are visible. Once this is done, add the cream, white wine, a dash of lemon juice and milk, stirring constantly.

Next, the Gorgonzola cheese is added. The cheese is again added while stirring constantly. Once the cheese has been added, continue stirring until the cheese has melted.

Then the sauce must be seasoned with a pinch of sea salt and pepper. Once that is also done, the sauce is cooked over medium heat for about 10 minutes. While the sauce is simmering, it needs to be stirred occasionally, this will prevent the sauce from burning.

The pork medallion preparation

After the Gorgonzola sauce is simmering, take care of the meat in the meantime. First heat some oil in a frying pan. When the oil is hot enough, sear the pork medallions on both sides for about 3 – 4 minutes. While searing, season the meat with salt, pepper and paprika seasoning. When the pork medallions are done, they have to rest for a short time (about 3 – 4 minutes). Then they can be served in a serving pan together with the finished sauce.

If you like, you can sprinkle some fresh garden herbs over the pork medallions and enjoy your meal.
